These Spanish boquerones—fresh, marinated anchovy fillets—are sustainably fished from the Northeast Atlantic and the Mediterranean by the same Catalan family for five generations. Selected by chef José Andrés for his namesake line, they are prized for their delicate texture and clean, bright flavor. Each fillet is lightly cured in white wine vinegar, then packed in extra virgin olive oil with a touch of sea salt.
