VINEYARD: The Albariño grapes are sourced from the Gomes Vineyard, located on Andrus Island in the Sacramento Delta. The Gomes family, with Portuguese heritage, has been farming this land since the 1800s. The vineyard features deep, rich soils nourished by the Sacramento River and is dry-farmed without cultivation. It is currently transitioning to organic certification.
VINIFICATION: After whole-cluster pressing, the juice is settled for two days to ensure clarity and purity. Fermentation occurs in stainless steel tanks with native yeasts at controlled temperatures between 60-65°F for approximately three weeks. The wine undergoes secondary fermentation in the bottle for two months, followed by disgorgement and a light dosage before being sealed with a crown cap.
DOSAGE: Extra Brut, indicating a very low sugar addition, resulting in a crisp and bone-dry profile
