Though their flagship creamery began in Point Reyes Station, production for their newer cheeses now takes place in Petaluma using certified organic milk sourced from neighboring Straus Family Creamery.
‘Hop Along’ is a semi-firm, washed rind cheese made from pasteurized cow’s milk and aged for 45 days. After forming, the wheels are washed in organic apple cider from Fort Point Beer Company, a process that encourages the development of a rosy, edible rind. The resulting cheese is smooth and elastic with aromas of toasted nuts and cooked custard, and flavors that are savory, earthy, and subtly fruity.
