Domaine des Deux Roches, founded by childhood friends Christian Collovray and Jean-Luc Terrier, lies in the heart of the Mâconnais near the limestone cliffs of Solutré and Vergisson. Together, they farm sustainably and craft precise, mineral-driven Chardonnay that bridges the purity of classic white Burgundy with the generosity of southern fruit. The ‘Tradition’ cuvée is their signature Mâcon-Villages bottling—bright, textured, and deeply expressive of limestone terroir.
- WINEMAKERS: Christian Collovray & Jean-Luc Terrier
- FARMING: Certified HVE (Haute Valeur Environnementale). Sustainable practices with cover cropping, limited chemical inputs, and respect for soil microbiology. All fruit is hand-harvested from low-yielding vineyards averaging 30 years in age.
- VARIETY: 100 % Chardonnay
- TERROIR: Multiple parcels across Davayé, Prissé, Pierreclos, and Charnay-lès-Mâcon. Limestone, marl, and clay soils on gently sloping, southeast-facing vineyards contribute freshness and mineral definition.
- VINIFICATION: Grapes are gently pressed using pneumatic presses and fermented with native yeasts in stainless steel tanks under temperature control. Fermentation proceeds slowly to preserve aromatics and fruit precision.
- AGING: The wine rests on fine lees in stainless steel for six to eight months, undergoing full malolactic fermentation. No new oak is used, maintaining purity and tension. Bottled in spring following the harvest year.
- TASTING NOTES: Lively aromas of pear, green apple, and lemon zest mingle with acacia blossom and subtle almond. The palate is sleek and mineral, showing white peach, chalk, and citrus with a crisp, saline finish.
- FOOD PAIRINGS: Perfect with roast chicken, seared scallops, creamy pastas, or chèvre with fresh herbs.
