Founded by the Aubert family in 1823 and now led by Jean-Claude and Didier Aubert, this estate has long focused on crafting expressive Chenin Blanc from the Coquette Valley near Vouvray. Their “Méthode Traditionnelle” sparkling cuvée reflects that heritage, using time-honoured winemaking and terroir-driven principles to produce a Loire fizz of clarity and elegance.
-
WINEMAKERS: Jean-Claude & Didier Aubert
-
FARMING: Estate vineyards are tended with respect for the land, featuring hand-harvested fruit and minimal intervention in the cellar to highlight natural quality.
-
VARIETY: 100 % Chenin Blanc
-
TERROIR: The vines are planted on tuffeau (volcanic limestone) in the heart of Vouvray, where their well-draining soils contribute finesse and a bright mineral spine.
-
VINIFICATION: The base wine is made from hand-harvested grapes which are whole-cluster pressed. Secondary fermentation is carried out in bottle (“Méthode Traditionnelle”), followed by extended lees ageing for depth and texture.
-
AGING: Long lees ageing in bottle gives creamy autolytic complexity while preserving high natural acidity and freshness.
-
TASTING NOTES: Bright aromas of pear, green apple and honeysuckle are layered with brioche and subtle almond. On the palate the mousse is fine, the texture elegant, supported by fresh acidity and a chalky mineral finish.
- FOOD PAIRINGS: Ideal with shellfish, poached fish, goat cheeses, or as an elegant aperitif.
