LIWA, named after the Miwok word for water, offers a thirst-quenching Grüner Veltliner crafted in collaboration with Inizi Winery.
- WINEMAKER: In collaboration with Inizi Winery, Guerneville, CA
- FARMING: Organically farmed in Monterey County
- VARIETY: 100% Grüner Veltliner
- TERROIR: Monterey County's cool climate and diverse soils provide an ideal environment for Grüner Veltliner, contributing to the wine's bright acidity and complex aromatics.
- VINIFICATION: The fruit was destemmed and skin-soaked for 24 hours before pressing. After cold settling for 48 hours, the juice naturally warmed to initiate fermentation, which was maintained at 56°F until dry. The wine was lightly sulfured to prevent malolactic fermentation and aged on its lees for 5 months before filtering and bottling.
- AGING: Aged on lees for 5 months in stainless steel tanks
- TASTING NOTES: Deliciously bright and quenching, with flavors of lime, honeydew melon, and pear, leading to a light and crisp finish.
- FOOD PAIRINGS: Pairs well with light salads, seafood dishes, and spicy Asian cuisine.
